Caesar Salad Smash Tacos with Parmesan & Yogurt Dressing

Ingredients:

Filling

  • 1 lb (450 g) ground chicken
  • 2 tsp (8 g) Italian seasoning
  • ¼ tsp (2 g) salt
  • ¼ tsp (0.5 g) ground black pepper

Tacos

  • 6 medium flour tortillas
  • 1 tbsp (30 mL) local butter (for cooking)
  • 1 package Caesar salad mix

Yogurt Dressing

  • ½ cup (125 mL) plain local Greek yogurt
  • ¼ cup (60 mL) grainy mustard
  • 2 tbsp (30 mL) lemon juice
  • 3 tbsp (45 mL) honey
  • 1 tsp (8 g) salt
  • black pepper to taste

Serving

  • Croutons
  • Shaved local cheese

Directions:

  1. In a small bowl, whisk together Greek yogurt, grainy mustard, lemon juice, honey, salt, and black pepper until smooth.
  2. Taste and adjust seasoning as desired. Set aside.
  3. Lay a tortilla flat and spread a thin, even layer of raw ground chicken over half of it (about 2–3 tablespoons per tortilla).
  4. Sprinkle with Italian seasoning and a pinch of salt and pepper.
  5. Heat butter in a nonstick skillet over medium heat.
  6. Place the filled tortillas in the pan and cook for 4–5 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the chicken is fully cooked.
  7. Repeat with remaining tortillas as needed.
  8. Let the tacos rest for 1–2 minutes, then open slightly and fill with chopped Caesar lettuce, croutons, shaved cheese, and a drizzle of yogurt dressing.
  9. Serve warm and enjoy.
