Caesar Salad Smash Tacos with Parmesan & Yogurt Dressing
Ingredients:
Filling
- 1 lb (450 g) ground chicken
- 2 tsp (8 g) Italian seasoning
- ¼ tsp (2 g) salt
- ¼ tsp (0.5 g) ground black pepper
Tacos
- 6 medium flour tortillas
- 1 tbsp (30 mL) local butter (for cooking)
- 1 package Caesar salad mix
Yogurt Dressing
- ½ cup (125 mL) plain local Greek yogurt
- ¼ cup (60 mL) grainy mustard
- 2 tbsp (30 mL) lemon juice
- 3 tbsp (45 mL) honey
- 1 tsp (8 g) salt
- black pepper to taste
Serving
- Croutons
- Shaved local cheese
Directions:
- In a small bowl, whisk together Greek yogurt, grainy mustard, lemon juice, honey, salt, and black pepper until smooth.
- Taste and adjust seasoning as desired. Set aside.
- Lay a tortilla flat and spread a thin, even layer of raw ground chicken over half of it (about 2–3 tablespoons per tortilla).
- Sprinkle with Italian seasoning and a pinch of salt and pepper.
- Heat butter in a nonstick skillet over medium heat.
- Place the filled tortillas in the pan and cook for 4–5 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the chicken is fully cooked.
- Repeat with remaining tortillas as needed.
- Let the tacos rest for 1–2 minutes, then open slightly and fill with chopped Caesar lettuce, croutons, shaved cheese, and a drizzle of yogurt dressing.
- Serve warm and enjoy.
