Recipe for Sweet Chili Konnyaku Udon

 

Sweet Chili Konnyaku Udon

Ingredients:

  • 1 package Konnyaku Udon
  • 1 Tbsp Naked Naturals Sweet Thai Chili
  • ¼ cup cherry tomatoes, roasted
  • ¼ cup cherry tomatoes, fresh
  • ¼ cup textured vegetable protein or ground meat alternative
  • A pinch salt

Directions:

1. Rinse the Konnyaku Udon under cold water

2. Bring a pot of water to a rolling boil and add the Konnyaku Udon

3. Once the water boils again, remove the pot and strain the Konnyaku Udon

4. Prepare your ground meat alternative; heat a pan with a little oil and stir fry until fragrant

5. Shake off the excess water from the Konnayaku Udon and add to the ground meat alternative pan

6. Add a pinch of salt and Naked Naturals Sweet Thai Chili to the pan and mix until well combined

Tips:

· Before serving, sprinkle nutritional yeast or hemp heart for a boost in nutrition

· Add cayenne if you want it a little spicy

· You can find Konnyaku Noodles in many grocery stores – there are both shelf stable and refrigerated options

· Rinsing the Konnyaku Noodle is an important step as it has a distinct smell.
