Rustic Chicken Soup

Serves: 2 people

Ingredients:

  • 1 medium sized onion, sliced
  • 2 bayleaves
  • 1 piece of star anise
  • 1-2 pieces of cloves
  • 2 green chillies
  • 1 tbsp ginger-garlic paste
  • 1 tsp whole cumin seeds
  • 30 grams coriander stems
  • 20mls olive oil
  • 150ml chicken stock
  • 10ml lemon juice
  • 30 grams of julienned chicken breast
  • 10 grams of julienned bell peppers
  • 5 ml cornstarch slurry
  • Roughly chopped coriander for garnish

Directions:

1. Heat some oil in a saucepan and temper the whole cumin, bay leaf, star anise and cloves until fragrant

2. Add sliced onion and sauté for a few minutes. Add the ginger-garlic paste & green chillies to the pan and cook until the mixture turns aromatic

3. Next, add the coriander stems to the pot and let its flavour infuse and seep well for a couple of minutes until the stems turn tender

4. Reduce the heat to medium-flame

5. Add chicken stock and let everything simmer

6. Once the mixture boils, blend everything using a blender and strain the soup

7. Put the strained soup back into the saucepan and let it simmer on the stovetop on a low flame

8. In a separate pan, heat a tablespoon of oil and toss the sliced chicken breast with the chopped bell peppers and cook until the chicken is cooked ensuring that the bell peppers don’t swell too much and maintain their crunchiness

9. Add everything to the strained soup and season everything using salt, pepper and lemon juice

10. Stir everything together and thicken the soup using the cornstarch slurry

11. Add in chopped coriander and give it a quick stir on low heat flame

12. Serve hot in a bowl and enjoy!
