Recipe for Grilled Rainbow Trout With Summer Vegetables

Ingredients

• 1 rainbow trout
• 1 lemon thinly sliced
• 1 lemon juiced
• 2 Tbsp Farm Boy™ Extra Virgin Olive Oil (1 L)
• salt and pepper to taste
• 1 pint cherry or grape tomatoes
• 2 romaine hearts

Directions

1. Start with one fresh dressed rainbow trout and cut diagonal slits along the length of the fish, about 2″ apart, down to the bones. Place a thin slice of fresh lemon in each unit.

2. Rub fish with Farm Boy™ Extra Virgin Olive Oil, then season generously with salt and freshly cracked black pepper.
