Campfire Paella

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound diced chicken, chorizo, or preferred protein
  • 1 bell pepper, diced
  • 1 cup peas
  • 2 cups rice
  • 1/4 teaspoon saffron threads
  • 1 teaspoon paprika
  • 4 cups chicken broth
  • Fresh parsley (for garnish)

Directions:

1. Heat olive oil in a large cast-iron skillet or Dutch oven over the campfire.

2. Sauté diced onions and minced garlic until fragrant.

3. Add diced chicken (or other protein), bell peppers, and peas. Stir well.

4. Mix in rice, saffron, and paprika. Pour in the chicken broth.

5. Cover the skillet and let it simmer over the campfire for 20-30 minutes or until the rice is cooked and flavours are well combined.

6. Garnish with fresh parsley, serve hot, and enjoy your delicious campfire paella!
