Recipe for Garlicky Potato Packet from Mazola

While summer is near and we begin to rejoice at the resurgence of sunshine, we are equally excited to ring in the arrival of BBQ season! Mazola shared with us this delicious Garlicky Potato Packet recipe, made with potatoes, onions, salt & pepper, garlic and oil. This recipe is ultra low-maintenance, perfect for those who are deciding on a side dish for last-minute summer plans. Plus, you can use any leftovers for a lovely breakfast hash in the morning so nothing goes to waste!

Garlicky Potato Packet

Ingredients:

● 4 large potatoes, cut into bite-size pieces (about 5 cups)
● 1 small onion, cut into thin wedges
● 2 tablespoons Mazola Canola Oil
● 1/2 teaspoon garlic powder
● 1/2 teaspoon salt
● 1/4 teaspoon black fine grind pepper

Directions:

1. Preheat grill to medium or oven to 450°F.

2. Spray foil with cooking spray.

3. Combine potatoes, onion, oil, garlic, salt and pepper in a bowl; toss to coat.

4. Spoon vegetables onto center of foil.

5. Bring up sides of foil and double fold.

6. Double fold ends to form a packet, leaving air space in pouch for heat circulation inside packet.

7. Grill on covered grill or bake on cookie sheet 25 to 30 minutes until potatoes are tender.
