Farm Boy shared with us this fresh and flavorful recipe for Black Bean Tostadas, an easy and satisfying dish that’s perfect for weeknight meals or casual entertaining. Crispy corn tortillas are topped with creamy spiced black beans, crisp lettuce, pico de gallo, vegan feta, and a burst of fresh salsa. Black Bean Tostadas

Ingredients:

  • 8 Farm Boy™ Yellow Corn Tortillas
  • Farm Boy™ Avocado Oil Cooking Spray as needed
  • 1 cup diced onion
  • 2 cans Farm Boy™ Organic Black Beans
  • 1 Tbsp Farm Boy™ Organic Chili Powder or more to taste
  • 3 cups shredded lettuce
  • 1 container Farm Boy™ Pico de Gallo
  • 1 container Farm Boy™ Vegan Feta-Style Cheese Alternative crumbled
  • 1 jalapeño pepper sliced thinly
  • ¼ cup cilantro leaves
  • 1 cup Farm Boy™ Fresh Salsa

Directions:

  1. Spray Farm Boy™ Yellow Corn Tortillas with Farm Boy™ Avocado Oil Cooking Spray on both sides. Preheat air fryer to 375°F and bake tortillas for 6-7 minutes, flipping half way through, until golden and crispy. (Alternatively, you can bake in oven at 375°F for 12-15 minutes, until crispy.) Remove to a tray and reserve.
  2. Spray a large skillet liberally with Farm Boy™ Avocado Oil Cooking Spray, heat over medium-high heat and add onion. Cook, stirring often, until golden, about 5-7 minutes.
  3. Add Farm Boy™ Organic Black Beans with their liquid and mash until smooth. Season to taste with salt and Farm Boy™ Organic Chili Powder and cook until warmed through, about 5 minutes.
  4. Spread mashed beans onto crispy tortillas, then top with lettuce, Farm Boy™ Pico de Gallo, Farm Boy™ Vegan Feta Style Cheese Alternative, jalapeño slices, and cilantro leaves. Serve with Farm Boy™ Fresh Salsa.
