Heart Shaped Fried Potato Croquettes

Serves: 4 Large Croquettes
Total Time: 1 hour

Ingredients:

  • 600g peeled white potatoes
  • 2 tbsp milk
  • Pinch of salt and pepper
  • 1 1/2 cups panko bread crumbs
  • 1/2 cup all-purpose flour
  • 1 egg
  • 2 tsp water
  • Mazola Corn Oil for frying

Directions:

  1. Boil potatoes until soft. Mash well with milk and salt and pepper. Allow to cool to the touch.
  2. On a baking tray lined with baking paper, form heart shapes by hand or with a cookie cutter as a guide.
  3. Freeze until potatoes can be handled without breaking apart (about 30 minutes).
  4. Whisk together the egg and water until combined.
  5. Dredge frozen potato hearts in flour until completely covered. Dip in egg, then the panko breadcrumbs until fully coated.
  6. Heat Mazola Corn Oil, and when hot, add potato hearts and cook about 2-3 minutes per side, until golden brown. Serve immediately.
