Grilled Summer Zucchini Salad Recipe

Ingredients:

  • 4 medium green, yellow, and/or white zucchini
  • 4 Tbsp Farm Boy™ Lemon Garlic Dressing
  • 1/2 tsp Farm Boy™ Organic Oregano (14 g)
  • Farm Boy™ Fleur De Sel (240 g) to taste
  • cracked black pepper to taste
  • 1/2 cup Farm Boy™ Barrel Aged Feta (200 g) crumbled
  • handful mint leaves
  • lemon wedges

Directions:

  1. Trim ends of zucchini and slice lengthwise into ¼” thick slices.
  2. Place on shallow tray and drizzle with 4 Tbsp Farm Boy™ Lemon Garlic Dressing, Farm Boy™ Organic Oregano, Farm Boy™ Fleur de Sel, and black pepper, then toss to coat well. Let marinate for 30 minutes.
  3. Heat grill over high heat until it reaches 450°F.
  4. Place zucchini on grill and cook, covered, for 3-4 minutes, until they form grill marks. Flip zucchini and cook the second side for 3-4 minutes, or until tender.
  5. Remove zucchini to the same tray and cool down for about 10 minutes, then arrange on a platter. Drizzle any remaining juices from the tray onto the zucchini.
  6. Top with Farm Boy™ Barrel Aged Feta. Garnish with mint leaves and lemon wedges and serve.

Chef’s Tips:

  • If you have yellow squash, you can use some along with the zucchini.
  • If you have some bell peppers, you can add them as well.
  • Feel free to add walnuts or pine nuts to add some crunch.
  • You can use a combination of herbs: chives, basil and parsley would be fantastic.
