Canadian baker Marion Can Keken, owner of Butter Baked Goods in Vancouver, BC shared her Strawberry-Cheesecake Marshmallow Slice recipe with us. This Valentine’s Day special was created with the idea to not waste any of the cake cut-cut offs and utilise the small pieces to make something delicious. Inspired by their already existing peanut butter marshmallow slice they decided to make something a little different and after a few trials and errors they found the right formula and it was a hit. Indulge in the delicious blend of creamy cheesecake, strawberries, and fluffy marshmallows. With its rich white chocolate, velvety cream cheese, and a touch of sweetness, this irresistible treat is perfect for sharing. Slice it up, savour the flavours, and experience pure dessert bliss.
Strawberry-Cheesecake Marshmallow Slice
Serves two loaves (24 1”- slices)
Ingredients:
- Butter 120 g
- White Chocolate 200 g
- Cream Cheese 450 g
- Heavy Cream 300 g
- Icing sugar 130 g
- Strawberry Marshmallows 1200 g
Directions:
1. Mix the cream cheese with a paddle in a mixer.
2. Melt the white chocolate and butter and add to cream cheese mixture to combine.
3. Add the heavy cream and icing sugar to the mixture and whip everything until smooth. Don’t overmix. Combine the mixture with the marshmallows and put into a parchment-lined loaf pan. Let set overnight before slicing. Enjoy!
