Simple to make and naturally sweetened with honey, it’s a refreshing treat perfect for warm days.

Berry Blast Cottage Cheese Ice Cream
Ingredients:
- 4 cups Ontario cottage cheese
- ¼ cup honey
- 1 tsp vanilla
- 2 cup mixed frozen berries, divided
Directions:
- Place a loaf pan in the freezer.
- In a blender, add cottage cheese, honey and vanilla. Blend until smooth.
- Add 1 ½ cup of frozen berries and pulse a few times so they’re incorporated but not completely blended.
- Remove the loaf pan from the freezer and pour the cottage cheese mixture in. Top with the remaining berries, and freeze for 4 hours or overnight.
- Once ready to serve, let rest at room temperature for 5 to 10 minutes, until easy to scoop.
