Heart Shaped Fried Potato Croquettes
Serves: 4 Large Croquettes
Total Time: 1 hour
Ingredients:
- 600g peeled white potatoes
- 2 tbsp milk
- Pinch of salt and pepper
- 1 1/2 cups panko bread crumbs
- 1/2 cup all-purpose flour
- 1 egg
- 2 tsp water
- Mazola Corn Oil for frying
Directions:
- Boil potatoes until soft. Mash well with milk and salt and pepper. Allow to cool to the touch.
- On a baking tray lined with baking paper, form heart shapes by hand or with a cookie cutter as a guide.
- Freeze until potatoes can be handled without breaking apart (about 30 minutes).
- Whisk together the egg and water until combined.
- Dredge frozen potato hearts in flour until completely covered. Dip in egg, then the panko breadcrumbs until fully coated.
- Heat Mazola Corn Oil, and when hot, add potato hearts and cook about 2-3 minutes per side, until golden brown. Serve immediately.
