Dairy Farmers of Ontario brings us this recipe for Tomato Parmesan Bisque, a creamy, comforting soup blending tomatoes, cream, and savoury Parmesan.

Tomato Parmesan Bisque
Serves 2-3
Ingredients:
- 1 tbsp local butter, plus 2–3 small cubes for finishing
- 1 small onion, chopped
- 2 cloves garlic, sliced
- 1 can crushed tomatoes (398 ml)
- 1/2 cup chicken broth
- 1 cup local cream
- ½ cup grated local Ontario Parmesan
- Salt & pepper, to taste
- Optional: chili flakes, basil
Directions:
- In a large pot, melt the butter over medium heat.
- Add the onions and sauté until softened and translucent, about 5 minutes.
- Stir in the garlic and cook for 1 minute, until fragrant.
- Add the tomatoes, broth, and milk or cream, stirring to combine. Bring to a gentle simmer and cook for 10 minutes, stirring occasionally.
- Reduce the heat to low and stir in the Parmesan cheese until melted and fully incorporated.
- Add in the cubes of butter into the soup and mix until melted.
- Using an immersion (hand) blender, carefully blend the soup until smooth and creamy.
- Season with salt and pepper, then serve warm.
