Tomato Parmesan Bisque

Serves 2-3

Ingredients:

  • 1 tbsp local butter, plus 2–3 small cubes for finishing
  • 1 small onion, chopped
  • 2 cloves garlic, sliced
  • 1 can crushed tomatoes (398 ml)
  • 1/2 cup chicken broth
  • 1 cup local cream
  • ½ cup grated local Ontario Parmesan
  • Salt & pepper, to taste
  • Optional: chili flakes, basil

Directions:

  1. In a large pot, melt the butter over medium heat.
  2. Add the onions and sauté until softened and translucent, about 5 minutes.
  3. Stir in the garlic and cook for 1 minute, until fragrant.
  4. Add the tomatoes, broth, and milk or cream, stirring to combine. Bring to a gentle simmer and cook for 10 minutes, stirring occasionally.
  5. Reduce the heat to low and stir in the Parmesan cheese until melted and fully incorporated.
  6. Add in the cubes of butter into the soup and mix until melted.
  7. Using an immersion (hand) blender, carefully blend the soup until smooth and creamy.
  8. Season with salt and pepper, then serve warm.
