Cheesy Onion, Leek and Spinach Hand Pies

Ingredients:
- 2 Tbsp Farm Boy™ Extra Virgin Olive Oil (1 L)
- 1 Tbsp unsalted butter
- 2 small Vidalia onions halved and thinly sliced (about 4 cups)
- 1 medium leek cleaned and thinly sliced (about 2 1/2 cups)
- 1 tsp Farm Boy™ Garlic Flowers (190 ml)
- 4 cups fresh baby spinach
- 1 cup Farm Boy™ Classic Blend Shredded Cheese (280 g)
- 90 g Farm Boy™ Sharp Small Batch Cheddar (175 g) grated (scant 1 cup)
- 1/4 tsp Farm Boy™ Organic Chili Peppers (23 g) or to taste
- salt and pepper to taste
- 1 pack Farm Boy™ Butter Puff Pastry (450 g) thawed overnight in fridge
- 1 egg beaten with 1 Tbsp water
- 2 Tbsp Farm Boy™ Everything Bagel Seasoning (59 g) Farm Boy™ Poppy Seeds for topping
Directions:
- In large 12” skillet, heat Farm Boy™ Extra Virgin Olive Oil and butter over medium heat.
- Add onion and leeks and cook, stirring often, until golden and caramelized. This will take up to 30 minutes.
- When onions and leeks are golden, add Farm Boy™ Garlic Flowers and spinach and stir until spinach softens, about 3 minutes.
- Add Farm Boy™ Classic Blend Shredded Cheese, Farm Boy™ Small Batch Cheddar Cheese, Farm Boy™ Organic Chili Peppers, and salt and pepper to taste. Let mixture cool for 15 minutes.
- Meanwhile, unfold sheets of Farm Boy™ Pure Butter Puff Pastry and place on lightly floured surface. Roll them out to a 10” x 12” rectangle. Cut each sheet evenly into 9 pieces. Brush edges of half of the squares with egg wash and divide filling among those, leaving a 1/2” border.
- Top with remaining pastry squares, pressing edges to seal using the tines of a fork. Place pastries on parchment lined sheet pans and chill for 30 minutes.
- Preheat oven to 415°F.
- When ready to bake, brush tops of pastries with egg wash. Cut a thin slit into each pastry to allow steam to escape.
- Sprinkle with Farm Boy™ Everything Bagel Seasoning Blend or poppy seeds and bake for 23-25 minutes, until golden brown. Cool for 10 minutes and serve.
