Vegan Carrot, Yam, and Ginger Soup from Cookbook More Mandy’s

Vegan Carrot, Yam, and Ginger Soup

Makes 6 cups ( 4 portions)

Ingredients:

– 3 tablespoons coconut oil

– 1½ cups diced onion

– 2 cloves garlic, minced

– 2 tablespoons minced ginger

– ¼ teaspoon ground cinnamon

– 1 teaspoon sweet paprika

– Salt and freshly ground black pepper

– 3 cups diced-small carrots

– 1 ½ cups diced sweet potato

– 2 cups low-sodium vegetable broth

– ½ cup coconut milk

– 2 tablespoons lime juice

– Cilantro leaves, for garnish

 

Directions:

In a Dutch oven, warm the coconut oil over medium-low heat. Add the onion, garlic, and ginger and cook, stirring occasionally, until the onion softens and becomes translucent, about 5 minutes. Stir in the cinnamon and paprika and season lightly with salt and pepper. Continue to cook until the spices are fragrant, about 2 minutes.

Add the carrots, sweet potato, and broth. Bring to a boil, then lower the heat and simmer, covered, until the carrots and sweet potato are tender, 25 to 30 minutes.

Stir in coconut milk and lime juice. Puree the soup in a blender (or directly in the pot using an immersion blender) until smooth. Check the seasoning, adjusting with salt and pepper to taste. Serve topped with the cilantro leaves.

This soup can be refrigerated in an airtight container for up to 7 days or frozen for up to 6 months.
