Banana Bread Pudding by Susgrainable

Susgrainable is a Vancouver-based company established in 2018 that crafts easy-to-make baking mixes from rescued beer by-product. Susgrainable first produces Upcycled Barley Flour by rapidly dehydrating spent grain from local BC craft breweries creating a keto flour both high in fibre and plant-based protein while being virtually free of sugars. They then craft balanced easy-to-make baking mixes for the active busy lifestyle. They are on a mission to end food waste and low fibre diets in the most delicious way possible! This week, Susgrainable and Instagram Baker Kristi (@kandbcooking) shared their delicious recipe for Banana Bread Pudding.

Banana Bread Pudding

Ingredients:

– 2 1/2 cups Susgrainable banana bread (approx 3 slices), cut into 1” cubes

– 2 eggs

– 1 cup unsweetened cashew milk

– 1 tsp cinnamon

– 1 tsp vanilla

– 1 tsp sugar free maple syrup

– 1/4 cup raisins

– 1/4 cup walnuts, chopped

Directions:

Turn the oven on to broil. On a small cookie sheet spread out the banana bread cubes. Place under the broiler and allow to bake a min or 2 per side or till browned and crisp. Pull out of the oven and set aside a few minutes to cool. Turn the oven to 325°f. Meanwhile, in a large bowl whisk together the eggs, milk, cinnamon, maple syrup, and vanilla. Once the bread cubes are cooled add them along with the walnuts and raisins to the egg mixture. Stir to coat and allow to soak for 10mins. Once soaked evenly split the bread cubes amongst 3-4 ramekins. Spoon the remaining egg mixture on top of each to fill the ramekins. Place the puddings onto a cookie sheet and place them in the oven. Bake for 40-45mins till a toothpick poked in the middle comes out clean. The puddings can be enjoyed right away or cooled to serve later.

Optional – top with a dollop of vanilla yogurt and drizzle of sugar-free maple syrup.
